Clean eating sweets: Coffee and nut protein balls

Everyone loved the muffins from last week, so I thought I’d bring you another sweet treat. Who doesn’t need an extra caffeine hit at the moment? These protein balls can perk you up, take the edge off your sugar cravings and tide you over from snack time to dinner. Oh and they’re super yummy:

 

Ingredients:

500g almond meal
4 tablespoons of tofutti (available at Woolworths)
1/2 cup of short black expresso coffee
8 pitted dates
3 scoops of choc whey protein powder
3 tablespoons of cocoa powder
1/2 cup of unsweetened almond milk
2 tablespoons of natural almond spread or peanut butter.
2 tablespoons of honey
2 tablespoons of chia seeds or sesame seeds (optional)
Crushed peanut bits to cover the balls

METHOD:

Blender the dates, tofutti, expresso coffee, protein powder and almond milk together.
Once blended well, place in a large bowl with the almond meal, chia/sesame seeds, honey and almond spread/peanut butter.
Once both mixtures are combined together well, start rolling the mixture into your desired sized balls.
Then roll the ball through some crushed peanuts.

When you have finished covering all your protein balls in nuts leave them in the freezer for 45 mins to achieve a nice firm texture.
