Clean eating sweets: raspberry and goji berry cupcakes
We are definitely enjoying these sweet treats at the moment. Last week I posted my coffee and nut protein balls and today I have cupcakes for you!
Goji berries seem to be everywhere lately. They have plenty of vitamins and minerals and are so easy to throw in any snack you’re having. These little berries are a good source of vitamins C and A, fibre, iron, zinc and good old antioxidants.
Try my raspberry goji berry cupcakes and feel the goodness:
Ingredients
3 bananas
1 tablespoons of cinnamon powder
1/2 cup quinoa flakes
500g almond meal
1/2 cup of olive oil
2 eggs
(optional) 2 scoops of Choc or vanilla protein powder
1 cup of unsweetened almond milk
2 tablespoons of natural stevia
3 tablespoons of natural yoghurt
1 punnet of fresh raspberries
dried goji berries
1 teaspoon of bicarbonate
METHOD
Mix the wet ingredients together: eggs, olive oil, almond milk, stevia, yoghurt and bananas.
Once blended well, add your dry ingredients: almond meal, quinoa flakes, protein powder, bicarbonate soda and cinnamon powder.
Once the mixture is light and fluffy, pour into a cupcake pan. Make sure you lightly spray your pan before pouring mixture into them.
When your cupcakes are poured, lightly dress the cupcakes with goji and raspberries, as many as you like!
Leave in the oven on 180c for 35 minutes.
