Clean eating sweets: Blueberry cocoa protein muffins

We all get those cravings for something sweet (right?). But what I’ve learnt over my health journey is that you don’t have to give in and eat junk food, you can make something yummy AND healthy.

All you need is a few ingredients and you’ve got yourself a sweet snack with no guilt! These muffins are sugar free, gluten free, wheat free, low in fat, high in protein and fibre. Oh and they taste deeelicious:

Ingredients

2 cups of almond meal
2 eggs
1/2 cup of olive oil
2 scoops of Choc protein powder
2 scoops of organic cocoa powder
3 tablespoons of tofutti (available at Woolworths)
2 tablespoons of stevia
3/4 of frozen blueberries.

METHOD

Using a blender, mix eggs, olive oil, tofutti and stevia together until combined.
Then add almond meal, protein powder and cocoa into the mixture and keep blending until smooth.
Add the frozen blueberries and slowly stir them into the mixture.
Then pour into your favourite cup cake holders and place into the oven for 35mins of 180c.
